| Wholewheat flour | 500 gm |
| Salt | to taste |
| Fat for dough | 115 gm |
| Fat to brush over after baking | 115 gm |
| Water to make a soft dough | as rquired |
Method
- Sift flour. Add salt.
- Prepare a soft dough with water. Set aside for one hour. Knead well.
- Divide into even sized portions. Form into bals.
- Roll into rounds 17.5 cm (7") in diameter.
- Smear with melted fat. Roll into the shape of pencils.
- Apply fat over.
- Press vertically lightly. Set aside for 15 minutes.
- Roll out to 0.75cm (1/4") thick rounds.
- Bake on a dry griddle over slow fire. Place over live coal or over a gasflame to finish the cooking. Smear over immediately with fat.
- Beat lightly between the palms of the hands and seperate flakes. Tear into 4 to 5 pieces and serve hot.
