Bhindi fried in batter

Ingredients For 4 For 100
Ladies finger 450 gm 11 kg
Red chillies 5 gm 115 gm
Pepper 1/2 tsp 30 gm
Turmeric 1/2 tsp 30 gm
Cinnamon 1 small peice 30 gm
Salt to taste 50 gm
Batter
Bengal gram flour 30 gm 680 gm
Soda bicarbonate a pinch 10 gm (about)
Salt to taste 50 gm
Oil to fry (absorption) 30 ml 500 ml


Method

  1. Wipe ladies finger with a damp cloth and slitre.
  2. Grind together red chillies, pepper, turmeric, cinnamon and salt.
  3. Stuff ladies fingers with ground species.
  4. Prepare a thick batter with gram flour, water, salt and soda.
  5. Heat oil.
  6. Dip ladies fingers in batter and deep fry.
  7. Remove and drain on absorbent paper.
